Lemon Condensed Milk Fridge Slice

INGREDIENTS:

(Serves 10–12)

1 packet of Marie biscuits, crushed (approx. 200g)

1 tin (397g) sweetened condensed milk

½ cup freshly squeezed lemon juice

1 tbsp finely grated lemon zest

100g unsalted butter, melted

Optional: extra crushed biscuits or desiccated coconut for topping

DIRECTIONS:

Line an 8×8 inch square pan with parchment paper.

In a mixing bowl, combine crushed Marie biscuits and melted butter. Mix until evenly moistened.

Press the biscuit mixture firmly into the base of the pan to form a solid crust. Refrigerate while you prepare the filling.

In a separate bowl, whisk together condensed milk, lemon juice, and lemon zest until smooth and thickened.

Pour the lemon filling over the biscuit base and spread evenly.

Optional: sprinkle with extra crushed biscuits or coconut.

Chill in the fridge for at least 4 hours or overnight until set.

Slice into bars and serve cold.
