KIELBASA POTATO SOUP

INGREDIENTS:
1 tablespoon olive oil
1 pound kielbasa, sliced
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
4 potatoes, peeled and diced
1 cup heavy cream
Salt and pepper to taste
2 tablespoons parsley, chopped
DIRECTIONS:
Heat the olive oil in a large pot over medium heat.
Add the sliced kielbasa and cook until browned, about 5 minutes.
Remove the kielbasa from the pot and set aside.
In the same pot, add the chopped onion and cook until translucent, approximately 3 minutes.
Stir in the minced garlic and cook for an additional minute.
Pour in the chicken broth and add the diced potatoes.
Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, around 15 minutes.
Return the kielbasa to the pot and stir in the heavy cream.
Season with salt and pepper to taste.
Simmer for another 5 minutes to heat through.
Garnish with chopped parsley before serving.
