INGREDIENTS:
450g (1 lb) kielbasa sausage, sliced into 1/4-inch thick rounds
2 cans (15 oz each) baked beans (or 4 cups homemade baked beans)
1 medium onion, diced
1/2 bell pepper, diced
2 cloves garlic, minced
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon smoked paprika (optional for extra smokiness)
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
DIRECTIONS:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 4-5 minutes until browned on both sides. Remove from the skillet and set aside.
In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes, until the vegetables are softened.
Add the baked beans, ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and smoked paprika (if using) to the skillet. Stir to combine and bring to a simmer for 5 minutes to let the flavors meld.
Stir in the cooked kielbasa and season with salt and pepper to taste.
Transfer the mixture to the prepared baking dish and spread it out evenly.
Cover the dish with aluminum foil and bake for 30-35 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is bubbly and lightly browned.
