Key Lime Pound Cake with Key Lime Glaze

INGREDIENTS:
For the Pound Cake:
1 cup unsalted butter , softened
1 ½ cups granulated sugar
4 large eggs , at room temperature
2 tsp key lime zest (or regular lime zest if key limes aren’t available)
1 tbsp key lime juice (about 4–6 key limes or 1 regular lime)
2 ½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup whole milk , at room temperature
For the Key Lime Glaze:
1 ½ cups powdered sugar
2–3 tbsp key lime juice (adjust for desired consistency)
1 tsp key lime zest (optional, for garnish)
DIRECTIONS:
Step 1: Preheat & Prep
Preheat your oven to 325°F (165°C) . Grease and flour a loaf pan (9×5-inch) or line it with parchment paper for easy removal.
Step 2: Cream Butter and Sugar
In a large mixing bowl, use a hand or stand mixer to cream the butter and sugar together until light and fluffy (about 2–3 minutes).
Step 3: Add Eggs and Lime Flavor
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Mix in the key lime zest and juice until well combined.
Step 4: Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Step 5: Alternate Wet and Dry Ingredients
Gradually add the dry ingredients to the butter mixture in three parts, alternating with the milk (start and end with the dry ingredients). Mix just until combined—do not overmix.
