4 cups beef broth (or chicken broth)
1 (10 oz) can diced tomatoes with green chilies (like Rotel)
1 (4 oz) can diced green chilies (optional, for more heat)

4 oz cream cheese, softened and cubed
1 cup heavy cream
1 cup shredded cheddar cheese (plus extra for topping)
