Italian Ground Turkey Soup

INGREDIENTS:

For the Soup Base:

1 pound ground turkey

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

2 medium carrots, diced

2 celery stalks, diced

1 (14.5 oz) can diced tomatoes (with juice)

1 (6 oz) can tomato paste

4 cups chicken or vegetable broth

1 (15 oz) can white beans (cannellini or navy, drained and rinsed)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Optional Add-Ins:

1 cup small pasta (like ditalini or orzo)

1/2 cup grated Parmesan cheese (for garnish)

2 cups fresh spinach or kale, roughly chopped

DIRECTIONS:

Step 1: Cook the Turkey

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the ground turkey and cook until browned, breaking it into crumbles as it cooks. Season lightly with salt and pepper. Remove from the pot and set aside.

Step 2: Sauté the Vegetables

In the same pot, add the onion, carrots, and celery. Sauté for 5–7 minutes, or until softened.
