Homemade Fried Zucchini

Tender zucchini strips are coated in a simple seasoned flour batter and pan-fried until crisp and golden. This easy appetizer or side dish is best served hot with marinara, ranch, or another favorite dipping sauce.
INGREDIENTS:
2 to 3 small to medium zucchini sliced lengthwise into 1/4-inch strips
1 cup all-purpose flour
2 large eggs beaten
1/4 cup milk
1/2 tsp salt or to taste
1/4 tsp black pepper or to taste
2 cups extra-virgin olive oil or enough for 1/2-inch depth in the skillet
1/2 cup dipping sauce of choice for serving
DIRECTIONS:
Slice the zucchini lengthwise into strips about 1/4 inch thick. Season lightly with salt and black pepper.
In a shallow bowl, whisk together the eggs and milk until smooth.
In a second shallow bowl, combine the flour with additional salt and pepper to taste.
Pour enough olive oil into a deep skillet to reach about 1/2 inch in depth.
Heat the oil over medium to medium-high heat until it reaches approximately 350°F. Keep the pan handle turned inward and avoid overcrowding the stove area.
Dip each zucchini strip into the egg mixture and allow the excess to drip off.
Coat each strip thoroughly in the seasoned flour, then shake off any loose excess.
Carefully place a few zucchini strips into the hot oil without crowding the skillet.
Fry for 2–3 minutes per side, or until golden brown and tender.
Transfer the fried zucchini to a paper towel-lined plate or wire rack to drain.
Repeat with the remaining zucchini, allowing the oil to return to temperature between batches.
Serve immediately with the dipping sauce of your choice.
