Homemade Banana Pudding Cookies

INGREDIENTS:
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 ripe bananas, mashed
2 cups all-purpose flour
1 package (3.4 oz) instant banana pudding mix
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups white chocolate chips
1 cup vanilla wafer crumbs
DIRECTIONS:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Stir in the mashed bananas.
In another bowl, whisk together flour, banana pudding mix, baking soda, and salt. Gradually add to the banana mixture, mixing until just combined. Fold in white chocolate chips and vanilla wafer crumbs.
Drop dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
