Hobo Dinner Foil Packets

INGREDIENTS:

1 pound ground beef, lean

1 tsp salt

½ tsp ground black pepper

½ tsp onion powder

½ tsp garlic powder

1 pound baby red potatoes, washed and sliced in half

3 carrots, sliced or cut into cubes

½ white onion, sliced

2 tbsp Olive Oil

1 tbsp Italian Seasoning

1 cup Colby Jack cheese, finely shredded

DIRECTIONS:

Cut 4 large sheets of heavy-duty aluminum foil

In a medium bowl combine the ground beef, garlic powder, salt, pepper, and onion powder and mix it all together to combine well

Shape the meat into 4 equal-sized patties and place them in the center of the sheet of foil

In a medium bowl add the cut potatoes, the sliced or cubed carrots, the sliced onion, the Olive Oil, and the Italian Seasoning

Toss to coat all ingredients well

Divide the potatoes and carrots evenly between all four packets

Bring the sides of the foil up and roll the edges together
