INGREDIENTS:
For the Cookies
1 1/4 cups (150 g) whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1/3 cup (80 ml) coconut oil, melted
1/2 cup (100 g) coconut sugar or brown sugar
1 large egg
1 tsp vanilla extract
2 tbsp (30 ml) unsweetened applesauce
1/2 cup (90 g) dark chocolate chips or chunks
DIRECTIONS:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Prepare the Dry Ingredients
In a medium bowl, whisk together the whole wheat flour, baking soda, and salt. Set aside.
Step 3: Mix the Wet Ingredients
In a large mixing bowl, combine the melted coconut oil and coconut sugar. Stir until smooth.
Add the egg, vanilla extract, and unsweetened applesauce. Mix well to combine.
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the dark chocolate chips or chunks.
Step 5: Scoop and Bake
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-10 minutes, or until the edges are set and the centers look slightly underbaked (they will firm up as they cool).
Step 6: Cool and Serve
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
