Healthy Cheeseburger Soup
INGREDIENTS:
½ pound Ground Beef
¾ cup Onion, Chopped
¾ cup Carrots, Shredded
¾ cup Celery, Diced
1 tsp Basil, Dried flakes
1 tsp Parsley, Dried Flakes
4 tbsp Butter, Divided
3 cups Chicken Broth
4 cups Potatoes, Peeled and diced
¼ cup Flour, All purpose
2 cups American/Cheddar Cheese, Cubed or shredded
1½ cups Milk
¾ tsp Salt
¼ tsp Pepper
¼ cup Sour Cream
DIRECTIONS:
In a large skillet, brown the ground beef. Make sure to drain and set aside for later.
In a saucepan, add 1 tbsp of butter and let it melt. Add onion, celery, shredded carrots. Then add some parsley and basil flakes. Saute until tender.
Add the broth to the saucepan along with potatoes and beef. Bring to a boil.
When bubbling, reduce heat. Then, cover and simmer for 10-12 minutes. Try a piece of potato and make sure it is tender.
Melt 3 tbsp of butter in a small skillet and add the flour. Cook and stir for 2-3 minutes or until bubbly.
Add it to the soup and bring to a boil once again. Cook and stir for 2-3 minutes. After that, reduce heat to low.
Add the cheese, milk, salt, and pepper. Cook and stir for 2-3 minutes or until cheese melts.
Remove from heat and blend in sour cream.
