Grilled Veggie Burrata Sandwich
INGREDIENTS:
Produce
– 1 cup Baby spinach
– 2 tbsp Fresh basil
– 1/2 cup Fresh basil or mixed herbs
– 2 Bell peppers
– 2 cloves Garlic
– Juice of 1 Lemon
– 1 tbsp Fresh thyme leaves
– 2 Zucchini or yellow squash
Condiments
– 2 tbsp Grainy Dijon mustard
– 3 tbsp Honey
Baking & Spices
– Kosher salt, to taste
Oils & Vinegars
– 2 tbsp Champagne or apple cider vinegar
– 1/4 cup Extra virgin olive oil
Bread & Baked Goods
– 1 loaf Ciabatta bread
Dairy
– 8 oz Burrata cheese
– 4 slices Sharp provolone cheese
DIRECTIONS:
1. Heat your grill to medium-high.
2. Slice zucchini or yellow squash and bell peppers into thick pieces. Toss them in a bowl with olive oil, salt, and pepper.
3. Grill the veggies until tender with nice grill marks, about 3-4 minutes per side. Set aside.
4. Whisk together Dijon mustard, honey, lemon juice, thyme leaves, salt, and champagne or apple cider vinegar in a small bowl to make the lemon thyme honey mustard dressing.
5. Cut ciabatta bread into sandwich-sized pieces and slice them open horizontally.
6. Spread the lemon thyme honey mustard dressing on the bottom halves of the ciabatta bread.
7. Layer grilled vegetables, baby spinach, fresh basil or mixed herbs, burrata cheese, and sharp provolone cheese on top of the dressing.
8. Close the sandwiches with the top halves of the ciabatta bread.
9. Toast the sandwiches on the grill or in a panini press until the cheese melts and the bread crisps up if desired.
10. Serve the Grilled Veggie Burrata Sandwiches warm and relish the delightful flavors!
