INGREDIENTS:

For the Chicken:
2 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
For the Broccoli:
3 cups fresh broccoli florets
1 tablespoon olive oil
½ teaspoon garlic powder
¼ teaspoon salt & black pepper
For the Creamy Garlic Sauce:
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon Italian seasoning (optional)
For Serving:
2 cups cooked rice, quinoa, or cauliflower rice
Fresh parsley, chopped (for garnish)

DIRECTIONS:

1. Marinate & Grill the Chicken:
In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper.
Coat the chicken evenly in the seasoning mix.
Heat a grill or skillet over medium-high heat and cook the chicken for 5–7 minutes per side, until fully cooked (internal temp 165°F/74°C).
Let the chicken rest for 5 minutes, then slice or dice it.
2. Roast the Broccoli:
Preheat oven to 400°F (200°C).
Toss broccoli florets with olive oil, garlic powder, salt, and pepper.
Spread on a baking sheet and roast for 15–20 minutes, until lightly charred and tender.
