INGREDIENTS:
For the Crust:
2 cups (200g) chocolate cookie crumbs
6 tbsp (85g) unsalted butter, melted
For the Filling:
1/4 cup (60ml) crème de menthe liqueur
2 tbsp (30ml) crème de cacao liqueur
1 1/2 cups (375ml) heavy whipping cream
1/3 cup (40g) powdered sugar
8 oz (225g) cream cheese, softened
1 tsp vanilla extract
A few drops of green food coloring (optional)
For Garnish:
Whipped cream
Chocolate shavings or curls
Fresh mint leaves
DIRECTIONS:
Prepare the Crust:
In a bowl, combine the chocolate cookie crumbs and melted butter until well mixed.
Press the mixture evenly into the bottom and up the sides of a 9-inch (23cm) pie dish. Chill in the refrigerator for 30 minutes to set.
Make the Filling:
In a large bowl, beat the softened cream cheese and powdered sugar together until smooth. Mix in the crème de menthe, crème de cacao, vanilla extract, and food coloring if using.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assemble the Pie:
Spoon the filling into the chilled crust, smoothing the top with a spatula.
Cover and refrigerate for at least 4 hours, or overnight, until firm.
Garnish and Serve:
Just before serving, top with whipped cream, chocolate shavings, and fresh mint leaves for a festive touch.
