Garlic Parmesan Roasted Sweet Potatoes

INGREDIENTS :

2 sweet potatoes, peeled and sliced
2 tbsp. has. tea (10 ml) minced garlic
1 C. has. soup (15 ml) of olive oil
2 tbsp. has. soup (30 ml) of butter, melted
4 tbsp. has. soup (60 ml) of grated parmesan
1/2 tsp. has. tea (2.5 ml) garlic salt
1/2 tsp. has. tea (2.5 ml) fresh cracked pepper
1/2 tsp. has. tea (2.5 ml) Italian seasoning
Fresh thyme to taste

DIRECTIONS:

Preheat your oven to 400ºF (200ºC). Peel and cut the sweet potatoes into thin slices.
Place the sweet potato slices in a resealable bag. Add the garlic, oil, butter, salt, pepper, Parmesan and Italian seasoning and shake until well coated.
Lightly butter a baking dish and arrange the coated sweet potatoes in a spiral. Sprinkle with fresh thyme and a little parmesan if desired.
Cook the sweet potatoes for 30-35 minutes. Serve your roasted sweet potatoes with parmesan garlic warm and sprinkle with fresh thyme.
