INGREDIENTS:
1 lb ground chicken
1/2 cup breadcrumbs (Panko works well)
1/3 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese (for extra cheesiness)
1 egg, lightly beaten
3 cloves garlic, minced
1/2 small onion, finely diced
1 tsp Italian seasoning
Salt and pepper to taste
2 tbsp fresh parsley, chopped
1 tbsp olive oil

1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 tbsp melted butter
1 clove garlic, minced
DIRECTIONS:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan, mozzarella, beaten egg, garlic, onion, Italian seasoning, salt, pepper, and fresh parsley. Mix until just combined, being careful not to overmix to keep it tender.
