INGREDIENTS:
For the Steak Bites:
1 lb sirloin steak cut into cubes
2 tbsp garlic minced
4 tbsp butter
Salt and pepper to taste
Fresh parsley chopped (for garnish)
For the Smashed Potatoes:
1 lb baby potatoes
1 cup cheddar cheese shredded
2 tbsp olive oil
Salt and pepper to taste
Fresh chives chopped (for garnish)
DIRECTIONS:
Prepare the Smashed Potatoes:
Boil Potatoes: In a large pot, boil the baby potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
Preheat Griddle: Heat a griddle or large skillet over medium-high heat.
Smash Potatoes: Place the potatoes on the griddle. Using a spatula, gently smash each potato. Drizzle with olive oil and season with salt and pepper.
Cook and Add Cheese: Cook until golden and crispy, about 10 minutes per side. Sprinkle with shredded cheddar and cook until the cheese melts and bubbles. Garnish with chopped chives.
Cook the Garlic Butter Steak Bites:
Melt Butter: In the same griddle or skillet, melt butter over high heat until foamy.
Sauté Garlic: Add minced garlic and sauté until fragrant, about 1 minute.
Cook Steak: Add the steak cubes, season with salt and pepper, and cook until browned on all sides, about 8-10 minutes for medium doneness. Garnish with fresh parsley.
Serve: Arrange the steak bites and cheesy smashed potatoes on a serving platter. Serve warm and enjoy!
