French Onion Mashed Potatoes combine two beloved comfort foods—creamy mashed potatoes and the savory flavor of French onion soup. INGREDIENTS:

For the Mashed Potatoes

3 lbs (1.4 kg) Yukon Gold potatoes, peeled and cubed

4 tbsp unsalted butter

1/2 cup (120 ml) whole milk or heavy cream

1/4 cup (60 ml) sour cream

Salt and pepper to taste

For the French Onion Mix

2 large onions, thinly sliced

2 tbsp unsalted butter

1 tbsp olive oil

1 tsp sugar

1 tsp salt

1/4 cup (60 ml) beef broth

1/2 cup (50 g) shredded Gruyère cheese

DIRECTIONS:

Step 1: Cook the Potatoes

In a large pot, add the cubed potatoes and cover them with water. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.

Step 2: Caramelize the Onions

While the potatoes are cooking, heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes. Add the beef broth and cook for another 2 minutes until the liquid is absorbed. Remove from heat.

Step 3: Mash the Potatoes

Return the drained potatoes to the pot. Add the butter, milk, and sour cream. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

Step 4: Combine

Gently fold the caramelized onions into the mashed potatoes. Sprinkle the shredded Gruyère cheese over the top and stir lightly until the cheese melts into the hot potatoes.
