INGREDIENTS:
For the Mashed Potatoes
3 lbs (1.4 kg) Yukon Gold potatoes, peeled and cubed
4 tbsp unsalted butter
1/2 cup (120 ml) whole milk or heavy cream
1/4 cup (60 ml) sour cream
Salt and pepper to taste
For the French Onion Mix
2 large onions, thinly sliced
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp sugar
1 tsp salt
1/4 cup (60 ml) beef broth
1/2 cup (50 g) shredded Gruyère cheese
DIRECTIONS:
Step 1: Cook the Potatoes
In a large pot, add the cubed potatoes and cover them with water. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.
Step 2: Caramelize the Onions
While the potatoes are cooking, heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes. Add the beef broth and cook for another 2 minutes until the liquid is absorbed. Remove from heat.
Step 3: Mash the Potatoes
