Flourless Oat and Chia Bread
INGREDIENTS:
(Makes 1 loaf)
2 cups (180g) rolled oats (certified GF if needed)
1/4 cup (40g) chia seeds
1 1/2 cups (360ml) water (or plant-based milk for richness)
1 tsp baking powder
1/2 tsp salt
(Optional add-ins: cinnamon, raisins, nuts, or honey for sweetness!)
DIRECTIONS:
1. Soak Chia Seeds
In a bowl, mix chia seeds and water. Let sit for 10 mins until gel-like.
2. Blend the Oats
Pulse oats in a blender until fine (like flour).
Add baking powder and salt, blend briefly.
3. Mix & Rest
Combine chia gel and oat flour in a bowl. Stir well.
Let batter rest for 5 mins to thicken.
4. Bake
Pour into a lined loaf pan.
Bake at 350°F (175°C) for 45-50 mins until firm.
5. Cool & Slice!
Cool 1 hour before slicing (for best texture).
