Easy Chimichurri Chicken
INGREDIENTS:
2 lbs chicken thighs, boneless, skinless
1/2 tsp fine sea salt
1 medium tomato, cubed
1/2 medium red onion, finely chopped
For the Chimichurri Sauce:
1 cup flat-leaf parsley, finely chopped
4 garlic cloves, minced
1/3 cup extra virgin olive oil
2 tbsp lemon juice
1/2 tsp dried oregano (or 1 Tbsp fresh)
1/2 tsp fine sea salt
1/4 tsp freshly ground black pepper
1/4 tsp crushed red pepper flakes
DIRECTIONS:
Chimichurri Sauce: Mix all sauce ingredients, cover, and chill for 2 hours or overnight.
Marinate Chicken: Toss chicken with salt, tomato, onion, and half the chimichurri. Marinate for 15 minutes or overnight.
Grill Option: Heat grill to medium/high. Grill chicken 5-7 minutes per side until internal temp is 165˚F.
Sauté Option: In a hot skillet with oil, sauté chicken 5-7 minutes per side until it reaches 165˚F.
Serve: Place chicken on a dish, top with remaining chimichurri, and serve.
