Cucumber, Tomato and Onion Salad

INGREDIENTS:
2 medium cucumbers, sliced or chopped
2 large ripe tomatoes, chopped
½ medium red onion, thinly sliced
2 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice or red wine vinegar
Salt, to taste
Black pepper, to taste
Optional Add-Ins (Highly Recommended)
2 tbsp fresh parsley or dill, chopped
¼ cup feta cheese, crumbled
Olives (black or green)
Pinch of dried oregano
Chili flakes (optional)
DIRECTIONS:
Prep Vegetables
Place cucumbers, tomatoes, and onion in a large bowl.
Make Dressing
In a small bowl, whisk olive oil, lemon juice (or vinegar), salt, and pepper.
Toss Salad
Pour dressing over vegetables and gently toss to combine.
Finish
Add herbs, feta, olives, or oregano if using. Taste and adjust seasoning.
Serve
Serve immediately or chill 10–15 minutes for extra freshness.
