Crockpot Ham & Potato Casserole
INGREDIENTS:
2 lbs ham, cubed (leftover ham works great!)
4 cups potatoes, peeled and diced (about 4-5 medium potatoes)
1 onion, chopped
1 cup shredded cheddar cheese
1 cup milk
1/2 cup chicken broth
1/4 cup all-purpose flour
1/4 cup butter, melted
Salt and pepper, to taste
DIRECTIONS:
Prepare the Sauce: In a medium bowl, whisk together the milk, chicken broth, flour, melted butter, salt, and pepper until smooth.
Layer the Ingredients:
In the crockpot, layer half of the cubed ham, diced potatoes, and chopped onions.
Pour half of the milk mixture over the layers.
Repeat with the remaining ham, potatoes, onions, and milk mixture.
Cook: Cover and cook on low for 7-8 hours or on high for 3-4 hours, or until the potatoes are tender.
Add Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover and let it melt.
Serve: Stir gently to combine the melted cheese into the casserole, then serve hot.
