Crockpot Chili

INGREDIENTS:
1 lb ground beef (or ground turkey for a lighter option)
1 medium onion, diced
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans or pinto beans, drained and rinsed
1 cup beef broth (or chicken/vegetable broth)
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional, for heat)
1/2 teaspoon onion powder
Salt and black pepper, to taste
For Toppings (Optional):
Shredded cheddar cheese
Sour cream
Chopped green onions
Fresh cilantro
Sliced jalapeños
Tortilla chips
DIRECTIONS:
Step 1: Brown the Ground Beef
In a skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks.
Add the onion and garlic, and sauté for 2–3 minutes until softened. Drain any excess grease.
Step 2: Add Ingredients to Crockpot
Transfer the cooked beef mixture to your crockpot.
Add the diced tomatoes, tomato sauce, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, cayenne pepper (if using), onion powder, salt, and pepper. Stir to combine.
Step 3: Slow Cook
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Stir occasionally if possible, especially in the last hour, to ensure even cooking and blending of flavors.
Step 4: Adjust Seasoning
Taste the chili and adjust the seasoning with additional salt, pepper, or spices as needed.
