Crock Pot Ham And Potato Soup
INGREDIENTS:
8 cups washed and cubed Yukon gold potatoes
1 small minced onion
2 large washed and sliced carrots
2 large washed and chopped celery ribs
8 ounces cubed ham
4 cups chicken or vegetable stock
1 teaspoon garlic powder
¼ cup all-purpose flour
1 cup Half-and-Half
½ cup sour cream
1 teaspoon salt
½ teaspoon pepper
DIRECTIONS:
Add the chopped potatoes, carrots, celery, onion, and ham to the crock pot. Pour in the chicken broth and add the garlic powder, salt, and pepper. Stir to blend everything together.
Set the temperature and time: LOW for 7–8 hours, HIGH for 4–5 hours.
When the soup has finished cooking, ladle out a cup of broth and potatoes. Mash the potatoes, then whisk in the flour, half-and-half, and sour cream. Pour the mixture back into the crock pot, cover, and cook on high for 15–20 minutes until the soup has thickened.
Ladle the soup into bowls and top with your favorite toppings.
