500g white fish fillets (such as cod or tilapia).
1 cup all-purpose flour.
1 teaspoon paprika.
1/2 teaspoon garlic powder.
1/2 teaspoon onion powder.
Salt and pepper to taste.
1 cup buttermilk.
1 cup panko breadcrumbs.
1/4 cup grated Parmesan cheese.
Vegetable oil for frying.
1/2 cup mayonnaise.
2 tablespoons lemon juice.
1 tablespoon Dijon mustard.

DIRECTIONS:

2. Submerge fish fillets in buttermilk, coat with flour blend. Repeat with buttermilk, then panko-Parmesan mix.
3. Warm oil in a skillet over a medium-high flame. Fry fillets 3-4 mins each side till crispy. Lay on towels to absorb excess oil.
4. For sauce: Blend mayonnaise, lemon, Dijon, and dill in a bowl. Adjust seasoning.
