Creamy Chicken Breast in Spinach Parmesan Sauce
INGREDIENTS:
– 4 boneless, skinless chicken breasts
– 2 cups fresh spinach, chopped
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– Optional: Fresh basil or parsley for garnish
DIRECTIONS:
1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.
2. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
3. Cook Chicken: Add chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
4. Sauté Garlic: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant.
5. Add Spinach: Stir in the chopped spinach and cook until it wilts, about 2-3 minutes.
6. Make it Creamy: Pour in the heavy cream, stirring until well combined. Bring to a slight simmer.
7. Add Parmesan: Gradually add the grated Parmesan cheese, stirring until the cheese melts and the sauce thickens.
8. Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the creamy sauce over each piece.
9. Simmer Together: Allow the chicken to simmer in the sauce for an additional 3-5 minutes, ensuring it’s heated through.
10. Garnish and Serve: Remove from heat. Garnish with fresh basil or parsley if desired.
