INGREDIENTS:

2 pounds ground beef

3 cups small-diced peeled russet potatoes

1 medium onion small diced

4 garlic cloves minced

1 can 15.5 oz red kidney beans, drained and rinsed

1 can 14 oz diced tomatoes with green chilies

1 teaspoon salt

1/2 teaspoon pepper

2 cups shredded cheddar cheese

DIRECTIONS:

Preheat the oven: Set your oven to 375°F (190°C).
Brown the beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks (about 8 minutes). Drain excess fat and set aside.
Prepare the base: In a greased 9×13-inch casserole dish, layer the diced russet potatoes evenly across the bottom. Season with salt and pepper.
Add onions and garlic: Distribute the diced onion and minced garlic over the potatoes.
Layer the beef and beans: Spread the browned ground beef evenly over the potato and onion layer. Then, add the drained kidney beans.
Add tomatoes: Pour the diced tomatoes with green chilies over the beef and beans layer.
Bake the casserole: Cover with foil and bake for 45 minutes.
Add cheese: Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve: Let the casserole cool for a few minutes before serving. Enjoy warm!
