INGREDIENTS:

1 cup cottage cheese (low-fat or full-fat, depending on preference)
6 large eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional, for extra flavor)
Optional Mix-Ins:
1/2 cup shredded cheddar or mozzarella cheese
1/4 cup diced bell peppers, onions, or spinach
Cooked crumbled bacon, ham, or sausage
Fresh herbs (like parsley, chives, or dill)
DIRECTIONS:
Step 1: Preheat Your Oven
Preheat your oven to 375°F (190°C) . Grease a muffin tin or line it with silicone muffin liners for easy removal.
Step 2: Blend the Base
In a blender or food processor, combine the cottage cheese, eggs, salt, pepper, and garlic powder (if using). Blend until smooth and creamy.
If you prefer a chunkier texture, whisk the ingredients by hand instead of blending.
Step 3: Add Mix-Ins
Stir in your desired mix-ins, such as shredded cheese, diced veggies, cooked meat, or fresh herbs.
