INGREDIENTS:

For the Cookie Dough:

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter , softened (divided: ½ cup for dough, ½ cup for filling)

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Cinnamon-Sugar Filling:

½ cup brown sugar (packed)

2 tablespoons ground cinnamon

2 tablespoons unsalted butter , melted

For the Glaze:

1 cup powdered sugar

2–3 tablespoons milk (or cream)

½ teaspoon vanilla extract

Sprinkles or extra cinnamon (optional, for garnish)

DIRECTIONS:

Step 1: Preheat Your Oven

Preheat your oven to 350°F (175°C) . Line baking sheets with parchment paper or silicone mats.

Step 2: Make the Dough

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream ½ cup softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.

Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.

Step 3: Prepare the Filling

On a floured surface, roll the dough into a 12×9-inch rectangle.
