Cinnamon Apple Crumb Cake

INGREDIENTS:

3 cups peeled, cored, and chopped apples

2 teaspoons cinnamon, divided

1/4 cup sugar, divided

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup sugar (for crumb topping)

1/2 cup flour (for crumb topping)

1/4 cup unsalted butter, cold (for crumb topping)

DIRECTIONS:

Preheat oven to 350°F (175°C). Grease a cake pan.

Peel, core, and chop the apples into small pieces. Toss with 1 teaspoon cinnamon and 2 tablespoons sugar.

In a bowl, whisk together flour, baking powder, salt, and remaining sugar.

In another bowl, beat eggs, then add melted butter and vanilla extract.

Combine wet and dry ingredients until just mixed.

Pour batter into prepared pan and spread apples evenly over the batter.

For crumb topping, mix flour, sugar, cinnamon, and cold butter using fingers or pastry cutter until crumbly.

Sprinkle crumb topping evenly over apples.

Bake for 45–50 minutes or until a toothpick inserted in center comes out clean.

Cool in pan for 10 minutes, then transfer to wire rack. Slice and serve.
