Cinnamon Apple Cake
INGREDIENTS:
For the Cake:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional, for extra warmth)
1/2 cup unsalted butter (softened to room temperature)
3/4 cup granulated sugar
1/4 cup brown sugar (packed)
2 large eggs
1 teaspoon vanilla extract
1 cup plain Greek yogurt (or sour cream for extra richness)
2 medium apples (peeled, cored, and diced into small pieces)
For the Crumb Topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar (packed)
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter (cold, cut into small cubes)
For the Glaze (Optional):
1 cup powdered sugar
2–3 tablespoons milk (or cream)
1/2 teaspoon vanilla extract
DIRECTIONS:
Step 1: Preheat Your Oven
Preheat your oven to 350°F (175°C) . Grease a 9×9-inch square baking pan or line it with parchment paper for easy cleanup.
Step 2: Make the Cake Batter
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2–3 minutes).
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt, beginning and ending with the dry ingredients. Mix until just combined.
Gently fold in the diced apples until evenly distributed throughout the batter.
Step 3: Make the Crumb Topping
In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon.
Cut in the cold butter using a fork or your fingers until the mixture resembles coarse crumbs. Set aside.
