Churro Bites
INGREDIENTS:
For the churros:
1 cup water
2 tablespoons granulated sugar
1/2 cup unsalted butter
1 cup all-purpose flour
2 large eggs
1 teaspoon vanilla extract
Vegetable oil, for frying
For the cinnamon sugar coating:
1/2 cup granulated sugar
2 teaspoons ground cinnamon
DIRECTIONS:
In a saucepan, combine the water, granulated sugar, and unsalted butter. Bring the mixture to a boil over medium heat.
Remove the saucepan from the heat and stir in the all-purpose flour until a smooth dough forms.
Transfer the dough to a mixing bowl and let it cool slightly.
Add the eggs, one at a time, mixing well after each addition.
Stir in the vanilla extract until evenly combined.
Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
Transfer the churro dough to a piping bag fitted with a star tip.
Pipe 1-inch strips of dough directly into the hot oil, using scissors to cut the dough from the piping tip. Fry the churro bites until golden brown and crispy, about 2-3 minutes per side.
Remove the fried churro bites from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
In a shallow bowl, mix together the granulated sugar and ground cinnamon for the coating.
While the churro bites are still warm, roll them in the cinnamon sugar mixture until evenly coated.
Serve the Churro Bites warm and enjoy their crispy, cinnamon-sugar goodness!
