Chocolate Strawberry Cheesecake
INGREDIENTS:
For the crust:
• 1 1/2 cups graham cracker crumbs
• 1/3 cup unsalted butter, melted
• 1/4 cup sugar
For the Strawberry Mousse:
• 2 cups fresh strawberries, pureed
• 1 cup sugar
• 1 tablespoon lemon juice
• 1 1/2 teaspoons gelatin powder
• 1/4 cup cold water
• 1 1/2 cups heavy cream, whipped to stiff peaks
For the Chocolate Drizzle:
• 1/2 cup semisweet chocolate chips
• 2 tablespoons heavy cream
For garnish:
• Fresh strawberry slices
• Whipped cream
DIRECTIONS:
14. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Chill for 20 minutes.
15. Sprinkle gelatin over cold water in a small bowl; let stand for 5 minutes to bloom. Heat strawberry puree, sugar, and lemon juice in a saucepan over medium heat. Add gelatin and stir until dissolved. Cool to room temperature.
16. Once the strawberry mixture is cool, gently fold in whipped cream until no streaks remain. Pour over the crust and refrigerate until set, about 3 hours.
17. For the chocolate drizzle, melt chocolate chips and heavy cream together until smooth. Drizzle over the mousse.
18. Garnish with fresh strawberry slices and additional whipped cream before serving.
