Chocolate Peanut Butter Layer Cake

INGREDIENTS:

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

1 cup whole milk

1/2 cup vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup boiling water

Peanut Butter Filling:

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

2 cups powdered sugar

1/4 cup heavy cream

Ganache:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

DIRECTIONS:

Preheat oven to 350°F (175°C). Grease and line two 9-inch pans.

Whisk dry ingredients. Add milk, oil, eggs, and vanilla. Mix until smooth.

Stir in boiling water. Divide batter and bake 30–35 minutes.

Cool completely before removing from pans.

Beat peanut butter and butter. Add powdered sugar and cream. Mix until fluffy.

Heat cream, pour over chocolate chips, let sit, and stir into ganache.

Layer cake with peanut butter filling. Pour ganache on top and let drip down sides.
