CHINESE SPECIAL FRIED RICE
INGREDIENTS:
100g diced pork
100g boneless chicken
1/2 cup cooked prawns
3 eggs
4 cups cooked rice
1 cup chopped carrots
1 cup green peas
3 cloves garlic, minced
1/2 cup chopped onions
Handful of chopped spring onions
3 tablespoons dark soy sauce
2 tablespoons light soy sauce
1/2 tablespoon sesame oil
1 tablespoon dark soy sauce (to season the boneless chicken and diced pork)
DIRECTIONS:
Prepare the Meat: Marinate the boneless chicken and diced pork with 1 tablespoon of dark soy sauce. Set aside for about 15-20 minutes.
Cook the Rice: Cook the rice according to package instructions and set aside to cool. It’s best to use leftover rice or rice that has been chilled in the refrigerator.
Cook the Eggs: In a large skillet or wok, heat some oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Cook, stirring occasionally, until the eggs are scrambled and fully cooked. Remove the scrambled eggs from the skillet and set aside.
Cook the Meat: In the same skillet or wok, add a little more oil if needed. Add the marinated boneless chicken and diced pork and cook until they are no longer pink and cooked through. Remove from the skillet and set aside.
Cook the Vegetables: Add a bit more oil to the skillet if needed. Stir in the minced garlic and chopped onions, and cook until they are fragrant and softened. Add the chopped carrots and green peas and cook until they are tender.
Combine Everything: Once the vegetables are cooked, return the cooked rice to the skillet. Add the cooked prawns, scrambled eggs, cooked boneless chicken, and diced pork to the skillet.
Season the Fried Rice: Pour the dark soy sauce and light soy sauce over the rice and mix well until everything is evenly coated. Stir in the sesame oil for added flavor.
Finish and Serve: Stir in the chopped spring onions and cook for an additional minute. Taste and adjust seasoning if necessary. Once everything is heated through, remove the skillet from the heat.
Serve: Serve the Chinese Special Fried Rice – Egg Fried Rice hot as a main dish or as a side dish with your favorite Chinese dishes.
