Chicken Parmesan Stuffed with Cream Cheese
INGREDIENTS:
For the Stuffed Chicken:
4 boneless, skinless chicken breasts (pounded to an even thickness)
8 oz cream cheese (softened)
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley (chopped, plus more for garnish)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper (to taste)
For the Coating:
1 cup all-purpose flour
2 large eggs (beaten)
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
For the Topping:
1 1/2 cups marinara sauce (homemade or store-bought)
1 cup shredded mozzarella cheese
Fresh basil (for garnish)
DIRECTIONS:
Step 1: Preheat Your Oven
Preheat your oven to 375°F (190°C) . Lightly grease a baking dish or line it with parchment paper for easy cleanup.
Step 2: Prepare the Cream Cheese Filling
In a small mixing bowl, combine the softened cream cheese, grated Parmesan, chopped parsley, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth and well combined.
Step 3: Stuff the Chicken
Cut a horizontal pocket into the side of each chicken breast, being careful not to cut all the way through.
