Chicken, Mango, and Avocado Salad

INGREDIENTS:

1 mango
1 avocado
2 Roma tomatoes
Juice of 2 limes
Several leaves of lamb’s lettuce (mâche) and arugula or fresh lettuce
1 bunch of fresh parsley (optional)
1 chicken breast
1 tablespoon of mild olive oil
Salt
Ground black pepper
Dressing:
100 ml extra virgin olive oil
25 ml sweet mustard
15 ml honey
Salt
Ground black pepper

DIRECTIONS:

Cut the chicken breast into small pieces, season with salt and pepper.
In a skillet, add a bit of olive oil and fry the chicken until cooked through. Set aside to cool.
Peel the mango, cut into pieces, place in a bowl, and drizzle with lime juice.
Halve the avocado, remove the pit, scoop out the flesh with a spoon, cut into pieces, and add to the bowl with mango and lime juice, mixing well.
Wash the lettuce or lamb’s lettuce and arugula thoroughly, then drain.
