CHICKEN BACON RANCH BAKED POTATO

INGREDIENTS:

6 jumbo baked potatoes
4 oz cream cheese, softened
1.5 cup shredded cheese
1/2 ranch seasoning packet
4 sliced cooked chopped bacon
2-3 boneless chicken thighs, cooked (bite sized)
1 cup broccoli
1/2 cup sliced onions
1/2 cup sliced bell peppers
2 tbsp kerrygold butter, melted
Olive oil, salt and pepper
Parsley or green onions to garnish
More cheese for topping
Optional: ranch for top

DIRECTIONS:

Preheat oven to 450. Poke potatoes with a fork. Rub potatoes with olive oil, salt and pepper.
Jumbo Potatoes will need to bake atleast 1 hour to 1:15 until soft.
Over medium heat add about 2 tbsp olive oil to a skillet and add in veggies, cooking until softened about 5-7 minutes. Stir often to avoid burning.
Mix softened cream cheese with ranch seasoning, butter, and cheese.
Scoop out center of mashed potatoes and add to a large bowl. Add in cream cheese ranch mixture. Return filling back to potatoes. Add veggies, chicken, bacon and more cheese. Enjoy.
