Cheesy Hasselback Potatoes
INGREDIENTS:
4 large russet potatoes
1/4 cup melted butter
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2-3 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and pepper, to taste
Fresh parsley for garnish
DIRECTIONS:
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. 
Prepare the Potatoes: Wash and scrub the potatoes. Slice them into thin cuts, about 1/4 inch apart, making sure not to cut all the way through the potato—leave about 1/4 inch from the bottom. 
Season the Potatoes: Place the potatoes on the prepared baking sheet. Drizzle melted butter over the potatoes, making sure to get the butter into the slices. Sprinkle with salt, pepper, and minced garlic. 
Bake the Potatoes: Bake the potatoes in the preheated oven for 45-50 minutes, or until the potatoes are tender and the edges are crispy. 
Add the Cheese: Remove the potatoes from the oven and sprinkle the shredded cheddar and Parmesan cheese into the slices of the potatoes. Return them to the oven for another 10-15 minutes, until the cheese is melted and golden. 
Garnish and Serve: Sprinkle fresh thyme and parsley over the potatoes for a burst of freshness. Serve hot and enjoy the cheesy goodness!
