Cheesy Cabbage Casserole
INGREDIENTS:
1 small green cabbage , chopped (about 6–8 cups)
1 medium Vidalia onion , chopped
8 tbsp butter (1 stick), divided
Salt and pepper , to taste
1 can (10 oz) cream of chicken or mushroom soup
1 cup shredded cheddar cheese (or your favorite melting cheese)
Optional toppings: Crispy bacon bits, breadcrumbs, or fresh parsley
DIRECTIONS:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) .
Lightly grease a 9×13-inch baking dish or casserole pan.
Step 2: Cook the Cabbage and Onions
In a large skillet over medium heat, melt 4 tbsp of butter .
Add the chopped onion and sauté until soft and lightly caramelized, about 5–7 minutes .
Add the chopped cabbage to the skillet and season with salt and pepper to taste. Cook, stirring occasionally, until the cabbage is wilted and tender, about 10–12 minutes . If the pan gets too dry, add a splash of water to prevent sticking.
Step 3: Combine with Soup
Once the cabbage is cooked, remove the skillet from heat.
Stir in the cream of chicken or mushroom soup until the cabbage mixture is evenly coated. Taste and adjust seasoning if needed.
Step 4: Assemble the Casserole
Transfer the cabbage mixture to the prepared baking dish, spreading it out evenly.
Dot the top of the casserole with the remaining 4 tbsp of butter (cut into small pieces).
Sprinkle the shredded cheddar cheese evenly over the top.
Step 5: Bake
Bake in the preheated oven for 25–30 minutes , or until the cheese is melted, bubbly, and slightly golden on top.
For an extra crispy topping, broil for 2–3 minutes at the end, watching closely to avoid burning.
Step 6: Serve
Remove the casserole from the oven and let it cool for 5 minutes before serving.
Garnish with optional toppings like crispy bacon bits, breadcrumbs, or fresh parsley for added texture and flavor.
Serve warm as a side dish or enjoy it as a hearty main course.
