Caprese Stuffed Avocados

INGREDIENTS:

Produce:
2 avocados
1 cup salad greens
1 cup tomatoes, chopped
Condiments:
2 tbsp basil pesto
Dairy:
1/2 cup fresh mozzarella, diced
Other:
2 tablespoons balsamic reduction

DIRECTIONS:

Prepare Avocados: Cut avocados in half and remove pits. Scoop out some flesh to make room for filling.
Prepare Greens and Tomato: Chop salad greens and tomatoes into small pieces.
Make Pesto: If using homemade, blend basil, garlic, pine nuts, Parmesan, and olive oil until smooth.
Stuff Avocados: In a bowl, mix greens, tomatoes, pesto, and mozzarella. Spoon mixture into avocado halves.
Add Final Touch: Drizzle with balsamic reduction.
Serve: Garnish with fresh basil or black pepper if desired. Serve immediately
