INGREDIENTS:

For the Cookies:

1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter (softened)

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract (optional, for authentic cannoli flavor)

For the Filling:

1 cup whole milk ricotta cheese (drained to remove excess moisture)

¼ cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon orange zest (optional, for a citrusy kick)

¼ cup mini chocolate chips (optional)

¼ cup chopped pistachios or almonds (optional)

For Garnish:

Powdered sugar

DIRECTIONS:

Step 1: Make the Cookie Dough

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter and sugar together until light and fluffy. Beat in the egg, vanilla extract, and almond extract (if using). Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 2: Chill the Dough

Divide the dough in half, shape into discs, and wrap each disc in plastic wrap. Chill in the refrigerator for at least 1 hour , or until firm.

Step 3: Prepare the Filling

While the dough chills, prepare the filling. In a medium bowl, mix together the drained ricotta cheese, powdered sugar, vanilla extract, and orange zest (if using). Stir until smooth and creamy. Fold in mini chocolate chips or chopped nuts if desired. Cover and refrigerate the filling until ready to use.

Step 4: Roll and Cut the Cookies

Preheat your oven to 350°F (175°C) . Line a baking sheet with parchment paper. On a lightly floured surface, roll out one disc of dough to about ¼-inch thickness. Use a round cookie cutter (about 2 inches in diameter) to cut out circles. Place the cookies on the prepared baking sheet, spacing them about 1–2 inches apart.

Step 5: Bake the Cookies

Bake for 8–10 minutes , or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack before assembling.

Step 6: Assemble the Cookies

Once the cookies are cool, spread or pipe a dollop of the ricotta filling onto the flat side of one cookie. Top with another cookie to create a sandwich. Repeat with the remaining cookies and filling.

Step 7: Garnish and Serve

Dust the assembled cookies with powdered sugar, and garnish with mini chocolate chips or chopped pistachios if desired. Serve at room temperature and enjoy the creamy, crunchy goodness!
