Brownie Cookies
INGREDIENTS:
110g/dark chocolate
30g/unsalted butter)
1 egg
45g/all purpose flour
55g/brown sugar
1g/baking soda
1g/baking powder
half tsp espresso powder
1 tbs of cocoa powder
DIRECTIONS:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat.
Melt Chocolate and Butter: In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can do this in the microwave in short bursts, stirring in between, or over a double boiler. Once melted, set aside to cool slightly.
Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, brown sugar, baking soda, baking powder, espresso powder, and cocoa powder until well combined.
Combine Wet and Dry Ingredients: Add the melted chocolate and butter mixture to the dry ingredients. Crack in the egg and mix until you have a thick and smooth cookie dough …
