Beef Liver and Onions
INGREDIENTS:
1 pound beef liver
3–4 tbsp bacon grease (or butter/margarine)
½ tsp salt
¼ tsp pepper
¼ tsp garlic powder
1–2 large onions, peeled and sliced into rings
½ cup flour
1 cup water
DIRECTIONS:
Rinse and pat dry the beef liver. Slice into even pieces.
In a bowl, combine flour, salt, pepper, and garlic powder. Dredge the liver pieces in the flour mixture.
In a skillet, heat bacon grease over medium heat. Add onion rings and cook until soft and golden. Remove and set aside.
In the same skillet, cook liver pieces for about 3–4 minutes per side until browned but still tender inside.
Return onions to the pan and add 1 cup water. Simmer for a few minutes to create a light gravy.
Serve hot, garnished with fresh parsley if desired.
