Banana Caramel Nut Cheesecake

INGREDIENTS:

– 1 1/2 cups graham cracker crumbs
– 1/3 cup melted unsalted butter
– 1/4 cup sugar
– 3 (8 ounce) packages softened cream cheese
– 3/4 cup sugar
– 3 large eggs
– 1 tsp vanilla extract
– 2 ripe bananas, mashed
– 1/2 cup chopped roasted peanuts
– 3/4 cup caramel sauce
– Sliced bananas, caramel sauce, and whole peanuts for garnish

DIRECTIONS:

1. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar to create the crust. Press into the bottom of a 9-inch springform pan. Chill in the refrigerator.
2. Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then stir in vanilla and mashed bananas.
3. Pour filling over the crust and sprinkle chopped peanuts on top. Bake at 350°F (175°C) for 50 minutes, or until set.
4. Allow cheesecake to cool. Drizzle caramel sauce over the cheesecake.
5. Chill for 4 hours, or overnight. Before serving, garnish with sliced bananas, extra caramel sauce, and whole peanuts.
