Banana Bread Cookies
INGREDIENTS:
For the Cookies:
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 ripe banana, mashed (about ½ cup)
Optional Add-Ins:
½ cup chopped walnuts or pecans (for crunch!)
½ cup chocolate chips
¼ cup raisins or dried cranberries
DIRECTIONS:
1. Preheat & Prep:
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or lightly grease it.
2. Mix the Dry Ingredients:
In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
Set aside.
3. Make the Cookie Dough:
In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
Add the egg and vanilla extract, mixing until smooth.
Stir in the mashed banana, making sure everything is well combined.
4. Combine & Fold in Extras:
Gradually mix the dry ingredients into the wet ingredients until just combined (don’t overmix!).
If using, gently fold in walnuts, chocolate chips, or raisins.
5. Bake to Perfection:
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
6. Serve & Enjoy!
Enjoy warm with a cup of coffee, tea, or milk!
Store in an airtight container for up to 5 days or freeze for up to 3 months.
