INGREDIENTS:
Nonstick cooking spray
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp kosher salt
2 tsp ground cinnamon
1/4 cup unsalted butter melted
1/4 cup granulated sugar
1 large egg
1/2 tsp vanilla extract
1/2 cup unsweetened applesauce
1 1/2 cups Honeycrisp or Gala apples finely diced, about 2 medium apples
2 cups powdered sugar
1/3 cup + 2 tbsp apple cider or apple juice
DIRECTIONS:
Preheat oven to 400°F and grease a baking sheet with nonstick cooking spray.
In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
In a large bowl, whisk melted butter and sugar until combined. Add the egg, vanilla, and applesauce, then whisk until smooth.
Add the dry ingredients to the wet and stir until just combined. Fold in the diced apples gently.
Drop 1-tablespoon scoops of batter onto the prepared baking sheet, spacing them a few inches apart.
Bake for 10 minutes. Remove from the oven and turn broiler on high.
Meanwhile, whisk together powdered sugar and apple cider to make a thin, pourable glaze.
Brush the warm fritters with some of the glaze. Broil for 2–4 minutes, rotating the pan often, until the glaze bubbles and caramelizes slightly.
Remove from the oven and brush the remaining glaze over the tops. Let sit for 15 minutes before serving.
