Bacon Egg and Cheese Breakfast Burritos

INGREDIENTS:

8 eggs large eggs
salt and pepper to taste
4 flour tortillas (10 inch)
1 cup shredded cheddar cheese
8 slices cooked bacon

DIRECTIONS:

Heat a large skillet over medium-high heat.
Coat with cooking spray or butter and add 10 eggs. Stir and cook just until eggs are set but still a little wet*, about 5 minutes.
Lay out 4 tortillas then layer each with ¼ of the scrambled eggs, ¼ cup cheddar cheese, and 2 slices of bacon.
Wrap 3 sides in, then roll closed.
Wrap each burrito tightly in [plastic wrap and refrigerate or freeze.
To reheat from frozen: Microwave each side for 1 minute.
To reheat from refrigeration: Microwave each side for 30 seconds.
Serve with hot sauce if desired.
