Avocado, Mozzarella, and Tomato Grilled Cheese
INGREDIENTS:
For the Sandwich:
4 slices of bread (sourdough, whole grain, or your favorite type)
2 tablespoons unsalted butter (softened, for spreading)
1 ripe avocado (peeled, pitted, and mashed)
1/2 cup shredded mozzarella cheese (or fresh mozzarella slices for extra creaminess)
1 medium tomato (sliced thinly)
Fresh basil leaves (a few sprigs for freshness)
Salt and pepper (to taste)
Optional : A drizzle of balsamic glaze for added sweetness and depth.
DIRECTIONS:
Step 1: Prepare the Ingredients
Mash the avocado in a small bowl and season it lightly with salt and pepper.
Slice the tomato thinly and pat the slices dry with a paper towel to prevent sogginess.
Shred or slice the mozzarella cheese, depending on your preference.
Step 2: Assemble the Sandwich
Spread softened butter evenly on one side of each slice of bread (this will be the outer side that gets toasted).
On the unbuttered side of two slices of bread, layer half of the shredded mozzarella cheese.
Add a generous spread of mashed avocado, followed by slices of tomato and a few fresh basil leaves.
Top with the remaining mozzarella cheese and place the second slice of bread on top, buttered side out.
Step 3: Cook the Sandwich
Heat a skillet or griddle over medium heat.
Place the assembled sandwiches in the skillet, buttered side down. Cook for 3–4 minutes , or until the bread is golden brown and crispy.
Spread a little more butter on the top side of the sandwich, then carefully flip it over using a spatula. Cook for another 3–4 minutes , or until the second side is golden brown and the cheese is melted.
Step 4: Serve and Enjoy
Remove the sandwiches from the skillet and let them cool for a minute before slicing in half.
Drizzle with balsamic glaze if desired, and serve immediately. Pair with a side of soup, salad, or chips for a complete meal.
